We currently have a 32-bit "Proxy Server" setup with the email archiver agent installed pointing to our CCR cluster that has the proxy enabler installed on it.

Which has been archiving emails as excepted.

Now we're about to decommission the CCR cluster and replace it with individual email servers.

The mailboxes will be migrated to these new email servers after they're built

The proxy server will not be decommisioned.

What do I need to do to ensure that the archived emails remain reachable after the CCR cluster has been turned off and the agents removed?

Since you have proxy machines, this process should be pretty straight forward.  On the properties of the Archiver agent, it will show an Exchange server name it is pointing to.  You will have to point the Archiver agent to the new Exchange server name.

Is your new Exchange servers 2007 or 2010?  How are the roles going to be setup (are all of these MB servers going to be CAS servers or will you have those seperate)?  Basically, you will need to make sure the OWA proxy enabler is installed on any server your end users are connecting to.  With Exchange 2007, that would include the MB role server (for Outlook users) and all CAS servers (for OWA).  For Exchange 2010, the users only connect to CAS servers directly, so the OWA proxy enabler needs to go onto all CAS servers.
